Our good friend found these marshmallows for us a couple months ago. They were an exciting treat, and reward for our potty training son. It was quite exciting to have this new treat.

20130907_123759Then a couple weeks ago we were at a BBQ with some friends from church. They offered a fire pit and supplies for S’mores. Knowing this ahead of time, we packed our special marshmallows. Our kids thought it was so incredible “cool” to roast marshmallows. They felt like we were the best parents ever for letting them have 2 plain marshmallows each.

This got us thinking, it was almost Labor Day weekend. My husband’s parents have a small fire pit. Last year we let our daughter roast banana on the fire because that was all we could do. So we decided to make an extra stop on our way to his parents just to buy some bags of marshmallows for everyone. We also bought safe chocolate and an almost safe graham cracker.

The kids reveled in their 3 marshmallows this time while mommy and daddy indulged with chocolate as well! Mmmm. They are quite tasty!

Heloooo my 3 readers! Hahaa. I stopped blogging once I was put on bed rest because I had a lot of resting to do :). Since my last post I delivered a healthy baby girl ( with an experience worth it’s own entire blog about *grumpy face*) and returned back to work. My 3yo is back in daycare and we’re on the same food calendar schedule as the daycare is. I’ve been a bit lazy and havent been keeping up in trying to make her food “match” her friends but I’m getting there. There seems to be even less time in the day to prepare meals when you have another kid to care for.

Gwen is doing well on her restrictions, she’s had a birthday since my last post and enjoyed her vegan, gluten free, soy free cake very much. We’ve attended other birthdays and I attempted to prepare her substitution “cake” for those and it went well also. She’s a little trooper about all of this. I have new pictures of her rash to post. (dont mind her messy room!) It seems to be clearing up still, so I hope that with continued efforts in keeping her diet clean, it will be gone sometime next year!


There are a few darker, raised red spots on her lower arm but it’s because she continues to pick at the rash as it scabs. I get so frustrated and tell her it’s making it worse but it’s become a habit now, I think.

My stomach has decided to start acting up lately. I went to my regular doctor and got an ultrasound of my entire abdomen and pelvis. They reported that everything looks normal. Well, that’s fantastic except for the fact that I don’t feel normal. I made an appointment for our Naturopath and will ask to do my food allergy blood test, if he agrees that is what is causing my pain and discomfort. It’s really frustrating getting older. My body is just reacting so differently to everything. Especially post-baby. I’m not losing weight as easily as I did with my first, exercising hurts worse and the soreness lasts longer than before, and now my guts just stopped accepting everything I chose to eat. I have a feeling I have an allergy that Gwen doesnt, since I stick pretty close to her diet and still am having issues.  My husband plans on getting his food allergy test done as well after mine. I’m also going to ask about the baby too. Just like my 3yo, she has major spit up that gets everywhere ALL the time no matter what we try. We’ve tried several different kinds of formula and nothing seemed to make any difference. Hopefully the doctor will have some suggestions for formula to buy or maybe make ourselves (because I have so much extra time for that…..)

This looks to be quite the life-long journey and is just beginning. Hopefully I can get more creative with quick and easy recipes to keep everyone happy. DSC_0051I was just given an article by a friend that was about  a friendship forged at a young age because of a shared dietary restriction. This got me thinking. We really have many conversation throughout out our week about food. These conversations are often with people we know and a little less frequently with people we don’t know.

We are created to need food. We are created to need other people. So many cultures around the world place such value in meals and celebrations involving food. This is important stuff! We are build to eat and hang out. This leads me to think about being intentional and ready  to discuss our family’s journey as we meet others over a friendly table of fun food. We could change the world!




Grandma and Grandpa took the family to Great Wolf Lodge for the kids’ birthday present. They had lots of fun and enjoyed their time. After fun in the water and arcade and hotel we even got to go to an actual restaurant and order actual food!

While we were still at the hotel it was becoming obvious that our son was reacting to the chlorine in the water. Our daughter too, to a lesser degree. Even mom was itchy a little bit. We showered after swimming and brought our own “safe” food from home for all meals (except lunch on our way home). We also anticipated a likely reaction to the water.

So, we returned home with the knowledge that we were going to be eating our ultra-strict (even more so than normal) “Detox” type diet to help clear up everyone’s skin as quickly as possible. This has led to my re-discovery of the versatility of yams!

I’ve made fried yam, yam chips, yam hash browns, yam pudding, improved yam pudding, and yam muffins all in the past 4 days. I’m glad we like yams (with the exception of our daughter who rejects yams but eats them just fine when I hide them). Boring fried yam fries led to yam fries with apples and pears added (yummy!) which led to improved yam pudding, which led to yam muffins! It’s been an exciting yam week so far!


Since my birthday, I have been a bit (a lot) obsessed with chocolate and finding a dessert that I like that can be as easy and as “go-to” as my favorite brownies.

Shortly after my birthday, I made a carrot cake, banana cream pie, and these cookie things. They were all awesome. But my complaints were as follows:

Carrot cake was awesome, but it did take quite a while to make, plus I over- whipped the eggs so my cake sank. It turned into carrot mush. But it was yummy.

The cookies were great. I made 2 batches with different flours ( sorghum for one and almond for the other) the almond one was the best, but I reacted as did the baby. Sad.

The banana cream pie was great (with coconut cream and dates as the “cream”).While all were good, none of them hit the spot (ya know- that brownie shaped hole). I started researching desserts, and found a recipe I wanted to try: brown butter salted blondies – this was the name, but after my adaptions, its more like maple-coconut salted blondies. But I found it. They were amaaaaazing.

Last year as our son was still in the process of getting completely cleared up, we were thrown for a loop. Just as the weather started getting warmer (like over 65 F – I know, ridiculous and not even close to hot yet) he started getting a new looking rash. It took us a little while to figure out that it was related to the heat.

So we kept him in shorts and t shirts as much as possible. Hawaii was not perfect, but he did okay. Sleepwear was the hardest to regulate. He needs something to keep him cool enough to keep the rashes at bay.  He also needs something warm enough that he doesn’t wake up 800 times because he’s cold. We found a couple options that seemed to work.

Then fall came and we had to revisit the sleepwear issue again. He needs to be warmer now, but not TOO warm. I think we have a basic plan worked out now. It’s summer again and he seems to have the same issue again this year.

Does anyone else out there have a similar experience, or someone in their life with similar experiences? What do you do to keep everyone comfortable and as rash free as possible?


On Friday, I turned the magical number of 31. And, as it turns out, I also got to go grocery shopping for the week! Because it was my birthday, I thought I’d treat myself and buy my FAVORITE brownie mix. It has one no-no in it, but its the one that is the lowest on my list of allergies. (Potato flour)

Up until 2 months ago, I ate these brownies weekly. Sometimes more so! They are chocolaty, chewy and oh so good and full of sugar. :) But 2 months ago, I had my 3rd baby and she started life with reflux as I am exclusively nursing her. I gave it a few days, thinking maybe there is another reason since she’s so new, but on the 4th day of life her reflux was consistent with every feeding and I knew with out a doubt that it was something I was eating. We’ve been down this road so often in our family (my sisters and I and their kids) that I just immediately took out dairy, citrus, nuts.
It happened that I didn’t have those brownies at first, but when she was 2 weeks old, I tried them and shortly after eating half a pan, she barfed up 2 entire feedings. And I’m not exaggerating when I say it went EVERYWHERE. I didn’t put it together with the brownies yet (denial), so a week later, I had them again, though not as many, with the same result – Barf-o-rama.
So ffwd 2 months, to my birthday and I bake my brownies. I’m so excited I went overboard and ate 3. 6 hours later, my daughter is barfing everything up. I felt bad because i just wasted her 2nd dinner because of my selfish need for the treat. I prepared myself for a late night barf fest, but that didn’t come- Praise God!
What I didn’t prepare for, was my reaction. I had a stomach ache all night and woke up with cold-like symptoms. I actually had to blow my nose multiple times and my throat was sore. Again, I’ve been experiencing weird food reactions plus seeing them in my family, I knew it was the brownies.
My birthday present to myself this year? No more chocolate :( Now its time to find a new quick and easy go-to dessert. (which is probably a good thing since I need to make a dessert with out potato flour anyway- it seems to be in EVERY pre-made mix – either that or corn starch)
I’m ready to take your suggestions for my new favorite dessert! My younger sister suggested maple blondies… I’m working on a variation I can eat…..



1 pound fresh cranberries
1 fresh pineapple
1 lemon
1/2 cup agave
2 TBL honey



Cut pineapple into large cubes, and quarter lemon.
Add cranberries and pineapple an to food processor and pulse until the consistency of relish.
Warm honey until it pours easily.
Fold agave and honey into relish, cover and chill for 1 hour.
Can be stored in glass in the fridge as well.




1 small ripe pineapple
1 mango
1/2 cup minced scallions
3 tablespoons chopped fresh cilantro
1 fresh lime
1-2 minced fresh Serrano pepper
1/4 teaspoon salt
Freshly ground pepper to taste



Finely dice the pineapple and mango and place in a medium bowl.
Add scallions, cilantro, lime juice, and Serrano.
Toss to mix.
Season with salt and pepper.
Serve or cover and refrigerate for about 1 hour to allow flavors to blend.




12 slices Black Forest ham
1 1/2 cup well beaten egg
12 ounces grated/crumbled cheese
3 TBL chopped fresh chives
ground black pepper to taste



Preheat oven to 400 degrees.
Gently fit one ham slice into each cup of well oil muffin tin, the edges will protrude over the top.
Add a bit of cheese to center of each, then pour egg substitute on top.
Top with cheese and cracked pepper.
Bake for 15 minutes, or until set.
Remove from pan, sprinkle with chives and serve.

NOTE: Choose thick smaller slices of ham thin slices.
